Come Prepared with These Easy Summer Picnic Recipes

Nothing says summer like a basketful of just-picked garden-fresh veggies.  The bounty of the earth displays in splendid colors, shapes and flavors from June to October, giving us a chance to train and delight our tastebuds with ease during these months of plenty.

Since we know choosing the right recipe for easy picnic dishes can be daunting, we’ve narrowed it down to four of our favorites from the cooking channel!

4 Easy Summer Picnic Recipes

Heirloom Tomato Caprese

4 large multi-colored heirloom tomatoes, washed and dried

Coarse sea salt

1 large ball Burrata cheese

½ c. fresh basil leaves, washed and dried

Extra-virgin olive oil, for garnish

Balsamic vinegar, for garnish

Freshly ground black pepper

Slice tomatoes into ½ inch thick slices.  Generously season the tomato slices with salt.  Arrange the tomato slices on a platter, overlapping slightly.  Add the Burrata on top and garnish with torn basil leaves.  Drizzle with olive oil and a splash of balsamic vinegar and season with salt and pepper.  

Cool Cucumber Salad

1 cup white vinegar

¾ cup sugar

2 English cucumbers, thinly sliced into half moons

1 small vidalia onion, thinly sliced

1 tablespoon chopped fresh tarragon

1 teaspoon salt

Combine the vinegar, sugar and ½ cup water in a pan and bring to boil over medium-high heat.  Pour over the cucumbers and onions in a heatproof container.  Add the tarragon and salt, and gently toss.  Refrigerate for several hours before serving.  

Watermelon with Feta, Mint and Chile

12 wedges watermelon, about 1-inch thick

2 ounces feta cheese, crumbled

2 tablespoons fresh mint leaves, torn

1 tablespoon chile-lime powder, such as Tajin (chile powder works fine if chile-lime is unavailable)

Lay out the watermelon wedges on a large platter.  Sprinkle the feta, mint and chile-lime powder over the watermelon.  Serve.  

Black Bean Salad with Mango, Cilantro and Lime

¼ cup apple cider vinegar

2 tablespoons fresh lime juice

1 tablespoon honey

1 teaspoon ground cumin

⅓ cup canola oil

Kosher salt and freshly cracked black pepper

½ small ripe mango, peeled and diced into 1/4-inch pieces

½ yellow bell pepper, cut into small dice

1 (14.5-ounce) can black beans, drained and rinsed

1 small jalapeno, seeds and ribs removed, minced

1 small red onion, diced

¼ cup fresh cilantro leaves, chopped

In a small mixing bowl, combine the vinegar, lime juice, honey and cumin. Slowly whisk in the oil until incorporated. Season with salt and pepper.

Mix the mango, pepper, beans, jalapeno and onion together in a large bowl. Drizzle the vinaigrette over the ingredients and toss to combine. Season the salad with salt and pepper. Garnish with the cilantro.
